五香腐皮肉卷
曾经尝试做过很多种五香卷,多数都觉得不满意,要不皮太咸,要不内馅太淡。今天做的五香是我把腐皮洗水抹干才包肉馅。炸出来的效果我满意,我不喜欢皮太咸。建议要包内馅时,把腐皮剪好,准备一碗水,每当要包时把腐皮浸水,后用布轻压才把馅料包紧。
材料:腐皮一张
后腿肉300克洗净之后剁成肉末
虾10只去壳去肠泥后稍剁成虾泥
马蹄8粒去皮切小方粒
芜须少许切细末
大洋葱一粒切细末
红罗卜一根切细粒
鸡旦一粒
调味料:酱青一汤匙
盐一茶匙
五香粉一茶匙
麻油二茶匙
白糖一茶匙
玉米粉二茶匙
做法:1)把以上的材料和调味料全部放入大碗,顺一个方向拌到完全均匀。
2)铺上洗好的腐皮,把内馅放入包成长条状。
3)把包好的肉卷放入蒸锅蒸10分钟,取出待凉。
4)把肉卷放入油镬炸到金黄酥脆就可。
